Cookery students at City of Bristol College recently worked with a top Bristol chef as part of a catering master class, creating a gourmet meal for 50 guests.
The menu, devised and cooked by Matt Lord and College students, included: Butternut squash and pumpkin veloute, Somerset pigeon and sweet onion tart, beetroot and juniper cured seat trout and rump of Nailsea lamb and custard tart, poached rhubarb and ginger ice cream.
Adrian Kirikmaa, Restaurant and Kitchen Manager at City of Bristol College, comments: “We have always worked closely with employers and this opportunity to link with such a prestigious chef provides invaluable training to our students. It’s incredibly exciting to be able to get involved in the event and offer our students real life experience of the industry they are passionate about.”
Matt Lord, Head Chef at The Bristol Hotel, commented: “I’m delighted to be the Guest Chef for this event. It’s a fantastic opportunity for students to understand what’s involved when working in a busy restaurant.
