Nottingham’s Michelin-starred chef Sat Bains shared his expertise with New College Nottingham (ncn) hospitality and catering apprentices at a demonstration in the College’s purpose-built Savoy Educational Trust (SET) Demonstration Theatre.

The event was filmed as part of a celebratory DVD, produced ahead of the SET’s 50th anniversary in April this year.
The SET sponsored the demonstration theatre in 2006 as an independent, grant giving charitable trust, whose main aim is to advance and develop education, training and qualifications within the hospitality industry.
Since 2004 the Trust has also supported ncn’s hospitality and catering curriculum in a number of other ways, including providing funds towards a specialist skills suite incorporating energy-saving appliances, and a computerised reservation and billing system for the college’s Adams Restaurant & Brasserie.
Sat Bains commented: “It’s important to me to give something back. If I can inspire just one student from a similar background to mine to go for it in the industry then that’s great.”
“I’ve had a connection with the SET for a long time. The Trust sponsored the Roux Scholarship that I won in 1999 and I’m very supportive of its work,” he added.
During the demonstration Sat and staff from Restaurant Sat Bains with Rooms discussed the ways we taste food, and how flavour can be added with methods such as barbecuing, wood smoking, cold smoking, poaching and pickling.
He also explained the importance of using local ingredients, including over eighty leaves and herbs that he uses at his restaurant and are found literally on the doorstep.
